Lima and Sieva beans (Phaseolus lunatus)

Lima beans are indigenous to tropical America, and in Britain they are known as butter beans. They are also known as siava beanspole beans or curry beans. Lima beans are a high-energy food with a high carbohydrate content, and they are easy to prepare as they require less cooking time than most beans. The protein content of lima beans is high and they have a high amino acid score which once again will be much improved by combination with grains. One of the endearing qualities of lima beans is that they have a soft, creamy texture and are 13,1% alkaline forming. Furthermore, they have a high concentration of potassium, magnesium, iron and calcium. Lima beans can be used like peas, and they can be incorporated into many different dishes and make excellent bean loaves.
