Solvents

Solvents are used to dissolve raw materials and concentrates and they are also used to incorporate flavours, oils, colours, antioxidants and vitamins into foods. Many of the compounds used are considered to be health risks, and the use of some of these compounds has been banned in some countries. In the UK, solvents are categorized as carrier solvents, extraction solvents and processing solvents. The list of permitted solvents in the UK is presented in table 6.4. The list is extensive, and raises questions as to the desirability of consuming foods treated in this way, particularly since some are suspected of having carcinogenic properties.
